When you are after a more complex Prosecco, look for one from the towns of Conegliano and Valdobbiadene in the vicinity of Veneto. The wines are riper, more structured and while they are more expensive than the basic Prosecco DOC wines, they do offer a richer experience in return.
This Prosecco has some yeasty, spicy character amongst the ripe peach and citrus fruit. It is fuller and more rounded, the bubbles are more defined and the flavours linger satisfyingly in the mouth. It is a fine choice for a celebration and it would be delicious with some raw or lightly cooked seafood, fish and chips or crispy fried chicken.
